After a couple of iPod and iTunes software updates, the problems have pretty much been resolved. There is no longer a long pause when copying tracks to the iPod when using iTunes. Also, the menu navigation lag has mostly been eliminated with the latest iPod software update. At this point, it is about the same as my older iPod and I do not notice it when skipping through songs.
